To the best of my knowledge, no. I think the documents for Word and
Excel were created because the introduction of the ribbon meant the menu
and toolbars were significantly different between the 2003 and 2007
releases of Excel and Word. As Project's user interface did not moved
to the ribbon, there are very few differences between 2003 and 2007.

If I do a search on Google for a command reference guide like this:
Reference: Locations of word 2003 commands in word 2007, I get this

I can get an excel sprea*** of 2003 and 2007 comands and their
differnt locations.
If I google this: Reference: Locations of project 2003 commands in
project 2007 , i get nothing.
Is there a excel spread*** for the project commands for v2003 and
2007?
