Baselines

Hello

I have the following scenario:

(1) Project plan complete and baselined
(2) Project tasks have changed and baseline start/finish saved into interim plan start1/finish1

Question: How do I re-establish the baseline start/finish? Actually, if I had a number of interim plans on a project how do I switch from one to the other?
