Good luck! I would say that if you must have a more modern OS, Linux
would be your best bet, in terms of supporting the hardware, and
actually running acceptably on those specs.
Just out of interest though, what do you have against Win95? I have a
few Pentium 1 machines that I use for various tasks, and I run Win95
by choice on some of them. It's the lightest weight desktop Windows
that can still run plenty of modern apps. Firefox and several decent
media players run quite happily under 95 for example, and you have the
bonus of already having drivers for your touchscreen etc.
