You haven't told us what version of the device, ActiveSync, or Outlook you
are running. It's usually a good idea to post as much information as you
know to begin with.
The tasks in WM5 can be edited on the device, at least, to set the reminder
time.
In Outlook 2003, you can set the default reminder time, which you can still
override on each task, if you want, by following the instructions in the
help (yes, RTFM), Tools | Options | Reminder Time. I've also verified that
turning on reminders in Outlook 2003, syncing with the WM5 device, and
checking the task shows the reminder time set as the default in Outlook. I
don't see a problem...

Independently, of what time the reminder is set on Outlook, after
synchronising, the tasks reminders "ring" at 8 a.m. on the due date. This
is
extremely annoying and sounds like something that would be easily
solvable.
But I cannot find a solution!
Any ideas?

P.S. Turning off the reminder (as suggested in another forum) makes it
better in the morning but kind of goes against the purpose of having
reminders on tasks.
