No you are not missing anything. What you want should be straightforward and
easy to do but the people who designed Outlook 2007 have hidden anything
useful away. The rambling responses to your request are indicative of the
problem. If you do find a solution I'd love to know it! I have the same
issue. We have stationery set up which is fine for a new mail but when you
reply in HTML mode it defaults to a font we don't want. I tried the Word
template route....with the same results as you. However, I've solved the
problem on my new laptop. I installed Thunderbird.

desired results: new emails don't have the styles I define in the

Sigh.

Can anyone tell me the best way to have my style formats be the
default style formats for new emails? I'm sure I'm just missing
something.
