Thats a nice thing to do.
When you open the contact in OL2003, you would find a box below the
email address which is called as the "Display As". You can type the
nickname for that person there and then when you send this person a
mail, once you type the person's email address, itwould be changed to
the nickname you typed in the Display As field.
