Every OS has a folder named Documents or My Documents.
Where you put the PST file is not important. Put it anywhere you want except Outlook's default location.
Renaming a PST file in Windows Explorer has never been supported. It corrupts the connection to the Outlook profile but fails to disconnect it completely, leaving you with a corrupt profile that cannot be repair. Go ahead and keep doing it if you see no harm.

What is the "profile" and what directories and files are part of it? On my
original drive my ../Outlook directory contained an archive.pst and an
outlook.pst only.
I do not see what harm renaming a pst file would cause. Perhaps you could
elaborate.

As far as your Outlook profile is concerned, you overwrote its file. You
never rename Outlook data files in Windows Explorer. You never copy Outlook
files to the default location.
Start over with a new profile and follow the directions that have been
posted to connect it to a good copy of your Outlook data file.
