Using alternate stationaries

I have a business stationary but only want to use it on business Email.
Personal Email should use no stationary. Instructions say go to Actions,
then "new mail message using." But I only find "new mail message" under
"actions" and my business stationary is appearing by default -- just the
result I am trying to fix. Please help!
