configuring and organizing tasks from the task pad

I would like to understand how can I set up a specific task and not only
track that task, but save and archive it like I would in a paper based
planner. I have it configured with categories that track hours, and billings
etc, as part of the task. What I want to do is 1. show that it is completed,
so I check it off, but 2. this is most important, be able to archive it so
that I can refer to it and see what I billed for that day.
IE: I write a task and track two billable hours, for 7/1/2005. How can I
save that task, so I can see what I did on this date, but now it is December
21st. I want to make sure only current daily tasks are in my task pad view,
and not 300 task long.
I appreciate any help here.
