Lots of people have the same problem! I am one of that person.
The machines which have the problems are clean machines. They have only Office 2007 installed. In the german access newsgroup there are people which have similar problems with access after installing sp2!

After installing several updates for Vista and Outlook on Sturday my Outlook
is not working properly. The relevant updates were:
* Update for 2007 Microsoft Office System (KB967642)
* Service Pack 2 for Microsoft Office series (KB957324)
The message I get is (tranlsated from Norwegian): "Outlook doesn't have
enough memory to start operation of services. Cannot carry out the
operations. Close some programs and try again". This message is the same even
if I have no other programs open. If trying to open any folder in a new
window I get the message "Cannot open. Not enough memory to complete the
operation". It means I cannot open my calendar. If trying to open calendar
invitations from my inbox, they do not open but merely sets themselves to
read. Yesterday there was not enough memory to send/receive mail but this
seems to be working today.
My laptop is a fairly new Dell Lattitude with 4 gigs of RAM running Vista
Professional. My mailbox is fairly big (1,16 gigs). Transferring half of the
mails in the inbox and the sent box to a cabinnet/folder not in the same pst
file did not for some reason make the Outlook pst file smaller. I have never
had performance problems or memory problems with my laptop or my Outlook
prior to the SP2 install.
My theory:
SP2 did something strange (without asking) after rebooting laptop and
Outllook (after installation) it looked as if it was transferring lots of
mails. Later someone in this forum told me this could have been a format
change for the mails. Could it be that Outlook after this change thinks that
the size of my mailbox has increased and thus thinks I'm out of memory? I
have no problems with opening a big number of other programs after or before
opening Outlook (the behaviour is exactly the same).
Since I don't really expect that anyone from Microsoft support will help me,
I hope someone in this forum could advice me:
1) Should I uninstall SP2 - is it likely to help? Is it normally problematic
to unstiall a service pack?
2) Should I reset my system to a point before the SP2 installation? Is it
likely to help?
I run a private one-man business so I don't have any IT department that can
help out.
