Help on Customizing Views and sorting by Categories

Good grief! I can't believe the snags I run into in OL2003! :-(
Someone clarify a few things for me:
1) I just did a customize current field and and filtered by the following
category:
"conv/expo committee". I get results for any other categories that have the
'conv/expo' in them even though they are totally different categories
"conv/expo invite-Associate"
I am also getting any other categories in this same seach that have the word
'committee' in them (which happens to be DOZENS of other categories!)
Why in the heck is a category search even listed in the filter search as
'categories' and you put a check in the box in front of the specific category
listed in your master category listing if it is going to give you 'sound'
alikes instead of specific categories you ask for?? This makes absolutely NO
sense to me. Please explain how worthless that feature is?
2) If I, instead, do a view by categories you have to page through 50,000
names to find the category you are looking for (and yes, I know it is
alphabetical by category, however if one contact has a possibility of 20 or
more categories that is a TON of listings by category because 1 person can
show up 20 or more times in a contact listing of more than 2000 contacts!)
and THEN, when I finally 'select' the names in that category, (one-by-one
that is!) and do a new email it displays the names in the TO: field showing
their email addresses!!!! When I specifically entered every contact showing
the 'Display as' field with <First Name(space)Last Name (Company Name)>
withOUT the email address displaying to others (and YES I know about the BCC
field but I don't want to use the BCC field because we need other people to
know who else the email was sent to (name only, no email address).
Why does it display with the email address showing?
Totally frustrated :-( I hope someone can come up with some good
workarounds or solutions that are not as cumbersome as most I have heard with
OL2003 (including merging)
