Yes, but you need to make sure that Outlook 03 uses its .pst file, not 02's.

Not sure about that. If you mean, say, an Excel doc. that is set up to work in a certain way, yes, it will save them.

3) I also don't want to loose all the setting I have in OUTLOOK ( ie my calender dates entries etc) so how do I go about this?

They will all be in your .pst file. Once you've installed 03, make sure that Outlook is using the new .pst file and merely use File/Open to open your old .pst file and copy what you want from it to the new one. Personally, I would save the old .pst file, uninstall Office 2002, reboot, do a clean up and install 03.

4) Likewise, the emails that I have still got on the system in the OUTLOOK "deleted file", how do I transfer them over to 2003

Lastly, I installed a trial copy of 2007 to try. What is the best and safest way of getting rid of this without damaging the 2002 pro that I have on my computer and will all the .xls files that I have created in 2007 be compatable with 2003

Just uninstall 07 BEFORE installing 03 and before uninstalling 02 if you choose to do that. Once you have 03 installed and try to open an .xls or ..docx file, Office 03 will offer an update to be able to read those files. Accept it.
