Uninstall the trial first, yes.

Normally you do not need to load a previous program onto a system to
upgrade. What will happen is when you start the installation of Office '07
upgrade it will search the computer for a upgrade qualifier already
installed. When it doesn't find one it will ask where it can find one.
Take out the '07 installation CD and put in the Office XP CD. Let it find
the XP CD and then once the computer is satisfied it will ask for the Office
'07 installation CD again. It's normally as simple as that.
