It could be a 2 step process - a lot of DVD content has AC3 audio.
You might want to look at DVDx http://sourceforge.net/projects/dvdx/
That should be able to rip only the audio content directly to AC3
audio files - something like DBPowerAmp http://www.dbpoweramp.com/
should then be able to convert the AC3 to MP3 audio.
