For audio files, you can use TotalRecorder. They say they are working on a
video version, but I wouldn't hold my breath.

You have to play the file once, and then TotalRecorder can capture it and
save it in any format you want. It works by setting itself up as a device in
your system, and then when other programs think they are going through the
sound card, they are actually going through totalrecorder. That way it can
capture sound files irrespective of what format they are in (but of course
you have to have other software to play the file once).
