Is there a way I can download and install the latest
Vista-compatible version of GraphEdit/GraphEdt without
installing the whole Vista SDK?

You do not need to install the SDK: just decompress it, copy
graphedt.exe and proppage.dll somewhere and regsvr32
proppage.dll. Or you can find it floating in the web...

Since the multimedia architecture of Vista is
dramatically different from previous Windows versions, is
GraphEdit still even a useful tool to see how files can
be rendered?

There is no dramatic difference in Vista: Vista still uses
what was already used in XP, including DirectShow (which is
what GraphEdit is based upon). Only for a very specific task
(that is, playing WindowsMedia content in
WindowsMediaPlayer) Vista uses the new MediaFoundation.
