As far as I can gather you can simply run several instances of the
windows media encoder. At least it says in the FAQs you can do this! :)
I think using more than one capture card is probably best for this,
although you can get capture cards with more than one input. The Osprey
100 for example has 3 composite inputs, which is handy.
