Thank you Neil, that helps quite a bit.

We are using a provider for the streaming so I don't really have any control
of what happens on their end.

I want to use a single bit rate stream for on-demand which I want the user
to be able to watch while it downloads and to save it to their computer if
they like.

So I'll play with the 'web server' mode.
