Go to 'System Preferences ...' on the Apple Menu, click 'Sharing', select the 'Internet' tab. This will tell you whether Internet Sharing is on or off and therefore whether the Mac is acting as a DHCP server. If it is you can click on the 'Stop' button.
As a side note, I don't know how many systems you've got or whether you have some special reason for using DHCP, but I've always found it less hassle in the long run to manually define each node's IP address rather than allowing a DHCP server to do it.
