I would recommend Windows 2000 over Windows XP if you're concerned with
performance. I'd also recommend dropping the ram of the VM back to
somewhere between 128 and 192mb, and I'd definitely recommend against
cranking the VM up to 512mb.

I would probably leave VRAM at 4mb if you run in a window, or 8mb if
you run the virtual machine at full screen. Also, make sure that the
bit depth for Windows matches the Host Mac (both in millions, etc.).

Virtual PC is very CPU intensive, so I'd recommend against leaving
other applications open on the host mac unless you need them.

Finally, perceptions of performance are very subjective... I consider
the performance I see on my 1.33ghz 12" G4 PB to be quite acceptable
running Windows XP Pro. It's nowhere as fast as my Mac, of course, but
it gets the job done in a reasonable amount of time.
