Yeah - that sound weird to me too - but not necessarily a Word bug.
I seem to recall that in some previous version of Word you could set
AutoCorrect to replace a single space with a double - or vice-versa - but
even that doesn't work in 2008. There is no other setting in Word that could
be causing it. In fact, I don't even know of any way to force it, let alone
trigger such behavior accidentally.
Do you have any other utility/keyboard mgmt software installed? And are you
*sure* that's what's happening or does it just *look* like 2 spaces? Turn on
the non-printing characters (¶) to confirm whether there are one or two dots
like this · between words.
Another thought - Is it possible you wrote "space bar" when you actually are
referring to the *return key*?
