You want multiple defaults, one for each language?
I think the easiest way to do this is to create two sets of Styles: One for
English, the other for Japanese.
You can explicitly set the fonts in each style, which gives you great
flexibility.
Word automatically changes "Keyboard" if you switch languages. But they
won't necessarily change the font.
If you are using Unicode fonts, whenever you type a character, Word looks in
the current font, and if it does not have the character, Word then works
outwards in a circle from the current font around the closest-looking fonts
available until it finds the required character.
But you cannot control the sequence in which this happens (except
negatively, but disabling the fonts you do NOT want it to use...).
I would use Styles. You can use Customise to add styles to toolbars. If
you were to create a toolbar for each language, you could find this quite
convenient. It's not much work to set it up, and after that, it's just a
matter of revealing the Japanese toolbar whenever you want to type Japanese.
All the styles on it can be pre-defined to format in you favourite Japanese
fonts. Etc.
