Your printer sounds jacked up (especially considering second post, and the jamming). When I am printing, my printer goes until it runs out of paper. A red light flashes. I add more paper and hit Go on the printer. It resumes printing.
No ordeal necessary. I don't think this is Word causing the issue.
First fix for printer issues: check online for an updated printer driver and re-install it.
Active print jobs should put the printer icon on your dock--click on it to cancel a print job that is still in progress.
PS. I'm confused by the exact situation that causes the problem. I'm assuming you want 200 copies and don't have 200 sheets in there. If really you want as many copies as you have paper and no more, and are just using 200 as an arbitrary number to get there, then say so (that sounds silly, though).

even though I'm not sure exactly how many sheets are in there.
Is there way to tell Word to just print till out paper and then stop?
As it is I have to go through this ordeal of shutting off printer, and it
jams up... it's a real headache. Thanks.
(actually if this is not possible, what is best procedure to officially
cancel the job out)
