Hi John:
Language can be a part of the document, the style, the paragraph, or the
sentence.
When you paste in from a PDF, you may or may not bring the language of the
text in with the copy. If you do not want to bring the language in, choose
"keep text only" when you paste (or Edit>Paste Special>Unformatted text...).
I usually prefer to paste unformatted: since I have gone to great pains to
get the formatting right in my document, I certainly don't want any rubbish
formatting from outside sources upsetting it :-)
Automatically update styles refers to whether or not the style updates in
the document automatically. But if you use (for example)
Format>Style>Modify>Language...) you have "manually" updated the style, and
you will be prompted to save the template.
Which template are we referring to? If you have an attached template and a
global template, the prompt may be referring to the global template
(Normal). If so, you should let that save anyway: it updates frequently and
you may wish to simply turn off the prompt in Word>Preferences to get rid of
it.

It gets worse! If I change back the language (from Tools) to English
(UK) and specify this as the default style, when I save the document
I'm prompted to "Do you want to save changes to document template?" If
I say Yes, then the document changes to English (US); if I say No, then
it keeps showing this prompt every time I close.
How do I fix this?
