So, I didn't do anything upon setting up Entourage so, I assume, these are
the defaults. If I click "family category," those people I've assigned to
"family" are listed. If I click, "Work," only those assigned to work show
up. Since those are there, it seems to me that there must be a way to add
others as it's just hard for me to believe that the typcal person, if using
Categories, would only have three; thus, my assumption that there must be a
way to add others.

To address the "Folders" and "Subfolders" problem first, you can't create folders or additional address books here unless you have an Exchange account. You're probably using POP and/or IMAP accounts.

What you're seeing on the left is the Folder List. An odd name, yes, if you can't create folders but technically your Address Book is considered a folder.

The "categories" you're seeing are really Address Book Views. They just happen to have the word "category" in the name. "Views" are ways of looking at your information through filters. For example, the "Family Category" view is showing you your contacts but filtering out everything except those that have been assigned the "Family" category.

Yes, you can create more and customize these.

1. Click on the Address Book Views header in the Folder List on the left.

2. Select File --> New --> Saved Search (another name for a View).

3. In the drop-down menu that shows "Item Contains", change the menu to "Category".

4. Use the other drop-down menus that appear to create your custom Address Book View. You can click the " + " button to add more filters. If you want, you can create an Address Book View where:

Match if any criteria are met
Category is "Family"
Category is "Friends"

You can click the Save button at the top right and name this new Saved Search as "Family & Friends Category".

Explore the different options in the drop-down menus and you'll soon see that you can get very detailed with your filtered Saved Searches.

Hope this helps!
