With Office I was able to get a Read Receipt. I can't seem to find where to add that on Entourage 2008 to an outgoing email message. Can anyone tell me how to or where to find that option? I would be forever grateful.

There is no DNR functionality built in to Entourage directly, but it can be added easily enough - see here for details.

However, you should be aware that they are very unreliable unless you are only working in a local domain on an exchange server. Many mail clients (on both Mac and Windows platformns) simply do not support them and pretty much all the others offer the user the chance to refuse to send a receipt when requested
