Very strange. As soon as I click the Save button the second time I see my Saved Search under Calendar Views (when it's twiddled open).
File permissions in the Finder won't affect what happens *inside* Entourage. If you're not seeing an item getting saved immediately then I suspect you may have some database corruption.
Test again and if you still don't see the item then try rebuilding your Database by launching Entourage with the Option key held down. This will open the Database Utility where you can select the option to Verify and or Repair.
