OK, what names do these folders have? Is there anything unusual about
them?

If you select the name of the account in the left hand panel in an
Entourage
browser window, you should see the folder listing in the right hand
panel.
Select the missing folders (they will probably be white instead of
blue).
Right-click on them and select 'subscribe' from the contextual menu.
