This seems like it should be possible to me, but I can't find any help on
this: I do our company print layouts but when I'm away, staff need to have
access to the files but I don't want them to have access to my emails when
they open Entourage.

Is there a way to add a login/security feature to prevent others from
accessing my messages but lets them log in to their own email account?

Such security is at the OS level. Create a separate user account on your
computer for other users and leave your layouts in a shared folder that
other users can access.
