I know that I can change font colors in individual messages, but why can't I
set a color in the preferences tab and have it apply to all messages I write

This is not an option in Entourage at this time.
When working in Office, you can use the ³Send Feedback² option under the
Help menu in all of the Office applications.
Note: many lists will strip out this type of text. Colored text best used
with close friends only.
