THE "Select Entourage as your default Mail Client" is missing

Email Client: pop

I've tried to set Entourage as my default mail client but it is missing from the 2008 instructions and the 2004 (which I have) requires you to open mac mail which I do not have an account for and therefore cannot open to change the setting. What are other options?
