You can set a schedule to do this. Under Tools in the Menu bar, select
Schedules. Open schedule: Empty Deleted Items Folder and set your
preferences. Personally, I like to give myself some time in case a good
message ends up there. I delete all mail from lists after reading, but I
often find later in the week a thread I didn't think I would be interested
in has the earlier messages in the trash. By having a delay built in, I can
go back and read earlier messages.
For Spam, I use the Nuke Messages script after checking for good messages.
