Preference icon on toolbar

I don't see a Preference icon on the Entourage toolbar, yet all the
instructions I can find about changing my e-mails from plain text to
HTML start with that. I have Entourage 2004 installed on a MacBook I
bought at the Apple store in October 2006 (they installed Entourage).
Everything under Format is also entirely gray, but I assume that's
because I am in plain text.
