It will change the date that's displayed in the 'received' column to the
date/time it was on my old server's mailbox?
I just wanted them to be sorted the way they were before when I sort by
received column

Resets the displayed date of an incoming message - useful for those
occasions whe you receive a message from someone whose clock was not set
correctly.
