If so, I'm missing the same thing. :) I find that solution quite simple,
especially since it doesn't make sense to me to use the same sig for all my
correspondents.

It doesn't make sense for the mailer to include the signature in
replies, either. This is a feature of Outlook, so it's a curious
omission from Entourage.

You can send feedback to the developers on this issue. Use the last menu
item under the 'Help' menu - "Send Feedback on Entourage". This message will
go directly to the developers. The more people that request this feature the
more likely it is to be implemented.
