I am running Entourage version 11.2.3
I go to my sent items and select the messages with attachments, then I go
to the messages menu and select remove attachments. I do get the message
that the attachments have been removed. However, I check the mailbox through
webmail and the messages are intact with the attachments still taking up
space.
I checked online and some other people are still having the same issue
(http://cs.its.uiowa.edu/exchange/entourageissues.shtml) Does anybody know
if this has been fixed?

Sorry,

I don't understand the problem. I remove attachments from incoming
message useing ENT 2004 v11.2.3 all the time by clicking on the Remove
button. The button works with Preview option check or unchecked.

Jesus is probably referring to IMAP messages. Since the attachments are not
decoded until the message is downloaded to the local cache on your computer,
removing the attachment removes it only from that local copy on your
computer, not from the original message on the server. You can do so, but
it's very roundabout:

1) Move the message to a local folder (such as the Inbox "On My Computer").
Make sure you really MOVE it, not just Copy it, using the Move button or
Message menu/Move. (If you drag it, it will Copy - so then delete the
original from the IMAP folder.)

2) In the local folder, Remove the attachment.

3) Then MOVE the local copy back to the IMAP folder. (Once again. MOVE. If
you drag-Copy it, optionally delete the local one after.)
