Minor issue with task items

In Outlook 2003, I could have tasks that had a due date, project name,
payment, and a bunch of other task details. In Entourage, it looks like I
can only have task name and due date. By Categories, Entourage just means
buckets for my tasks. In the project center, there's nothing else available
other than just putting tasks into more buckets. How can I add more task
details like the project name or the fee for this project? Is there some
script that adds this functionality?

If all else fails, is there a better task manager I could use outside of
Entourage on Mac?
