Entourage 2004 connecting to Exchange, Why cant I edit the subject field on incoming email

I was using entourage 10 and have upgraded to Entourage 2004 I am now unable
to edit the subject field of an incoming email, it did work under the
previous version. iMac running Panther 10.3.7 and a PowerBook G4 running
Panther 10.3.7 both connecting to exchange 2003 the only thing that has
changed is the Entourage upgrade
Please help this is a very useful feature for sorting incoming email to find
at a later date
