For reading or writing?

In either case, if you're in Panther, I would go to System
Preferences/Keyboard and Mouse/Keyboard Shortcuts, and make
Application/Entourage shortcuts for all the formats you might need. Make
sure they don't conflict with existing shortcuts (including any scripts).
Then you'll just have to press the shortcut to get the format you want. If
you're not in Panther, a one-line script, with keyboard shortcut, could be
created for each format.

There's no way to set a default from preferences. You have to reset it when
you need it.

For writing, "Automatic" is pretty good. Normally it will send out whatever
format is needed depending on the characters you've typed. You can override,
of course.
