What OS are you using? If you're using OS 9, go to Apple > Control Panels >
Remote Access. Click the "Options" button, and then click the "Protocol"
tab. Uncheck the option to "Connect automatically when starting TCP/IP
applications."

If you're using OS X, open System Preferences, and then choose Network
Preferences. If you're in OS X 10.2 or earlier, click the PPP tab. If
you're in OS X 10.3, choose "Internal Modem" from the connection list, and
then click "Configure". Click the "PPP Options" button. If you're in OS X
10.2 or earlier, uncheck the option to "Connect automatically when starting
TCP/IP applications." If you're in OS X 10.3, uncheck the option to
"Connect automatically when needed".

Note that you'll need to connect manually to the internet using Remote
Access (OS 9) or Internet Connect (OS X) to establish a connection from now
on.
