The Default mail client is a Windows File Association. And file associations are global,
not tied to a Windows user. That's the way Microsoft designed it.

It's the same issue is 2 users wanted different default program for playing MP3 files.

I don't think there is any graceful way around the issue.

The default mail program only comes into play when another program wants to send a new
message (e.g. a Contact Us link on a web page or sending a file from a program or Windows
File Explorer). So the workarounds are to start the program and let it make itself the
default, or if you want to use the non-default mail program, start a message in that
program and then attach the file, or copy/paste the e-mail address from the web page.
