I just flip on the checkmark box in the IIS Manager Web Site Properties page
marked "Enable logging"

> b) and what properties are you logging?

Simply the defaults that are used with W3C Extended Log File Format....
Date, time, Client IP, Server IP, Port, Command, Referrer... etc...
