Newbie: setup an email gateway

Hi, I have a small lan with some client and a 2003 server. I'd like to
configure the microsoft Smtp server to deliver all the received email
to an externalsmtp, provided by my isp. It should act in a trasparent
way allowing me to do not use the external smtp server inside the mail
client configuration.
I've done this before with Postfix on a Debian machine and it worked
like a charm.
Apparently it seems I have to create a 'virtual server' but I dont
understand how I should the this virtual server to relay all the email
to a specified external smtp.
This is probably a very easy question but if someone would point me to
a tutorial or just an easy explanation I would be very grateful.
