One thing I would try is to attach the hard drive to another machine,
configure it as the primary master and then try to boot and see what
happens.

You'll probably (no, in fact you definitely will) get loads of device
driver conflicts, etc but you may be able to get the machine running
to such a state where you can retrieve data and maybe even perform an
IIS migration.

You've got nothing to lose by trying it and merely trying to boot from
that drive in another machine won't damage the data on it in anyway.

If you do get to a position where you can access the data try this
utility to retrieve your IIS configuration :
