You're oversimplifying it.
Your MAC is anything but "just another IP-connected device".
I seriously doubt you'll be able to reprogram the Nokia from its current protocol.
VOIP through ISA requires either:
1 - an application filter that understands the protocol
2 - the ability to run the ISA Firewall Client
..and sometimes both...
