Thanks for a great answer. Can I ask you to elaborate a little on:
1. how we would 'be very, very careful' if we used ftp?
2. How , in fp, would we upload to our website? (if you can give as much
detail as possible it will be really helpfull - and probably save me another
4 days work !)

the FrontPage codes. In my experience (after 10 years of using
extensions) there are only 2 things you can't do with extensions
installed:
1) Use FTP unless you are very, very, careful.
2) Use SharePoint Services
However, your mileage may vary.

I have been trying to make a form that works, without installing server
extensions - because it sounded as though it was restrictive... and lots of
'what you won't be able to do' etc. if you do instal them.
One thing it said was that you will not have any .htaccess files at all - is
this true and what disadvantages are there to this?
I know (think??) that you give command for redirects etc. in .htaccess - so
does it mean that if you enable the server extensions, you cannot do any
re-direct??
I'd like to know what's entailed before making this jump.
