Exchange 2003 Deployment Tool

I have a test lab setup with a Win2k DC, a Win2k Exchange 5.5 server, and a
newW2k3 server. I want to move everything from the 5.5 server to the new
w2k3 server.

I obviously had to give my new exchange server a different name. After I go
thru the deployment tools, is there a way to rename the new w2k3 exchange 2k3
server so that it matches the old after the old is decommissioned? i want to
avoid having to modify the client profiles, the ISA config and the router
config.

Second question...i noticed during the deployment tools it changed my domain
email names to the organization/site extension instead of the domain name.
What step or where can I modify the domain name of the emails before the
conversion?
