By the down server I assume you mean the one that had Exchange on it before.
If so it needs to have its computer name changed. What impact this will have
on your network depends on what the server has on it now.
If you successfully uninstalled Exchange off the server then any references
to it in AD should be cleaned up, but it wouldn't hurt to follow the links
Andy gave to make sure.
Once you have renamed the old server, make sure that it re-registers with
DNS and updates its entry. Reboot or ipconfig /registerdns. Then add a Host
entry in DNS that has the server's old name and the IP address of the new
server. This way the profile will be re-directed to an Exchange server and
will update. And your users should be happy.
