2000 server with 2003 exchange > upgrade to 2007 ?

Hi,

I have exhcange 2003 running on a 2000 member server of a 2003 AD domain.

I would like to upgrade exchange 2003 to 2007. I understand i need to
upgrade the hosting 2000 member server but:

- what I got a new 2003 server box online and installed 2007 on there. could
i migrate the data accross then take the 2003 exchange server offline ?

- If not possible, i can live with losing email and bring a new 2007 server
online as a fresh instance. But how do i remove 2003 exchange from AD
correctly ?
