You ceate a new contact on the server as explained in the original post:
"Use Active Directory Users and Computers. Expand to the users OU, Right
Click and select new, then select contact"
During the creation of the contact you will be asked for the external email
address.

The explanation is correct and it is difficult to make it more specific.
After creating the contact you should get the properties of the bosses
mailbox and on this select to forward all mails to the newly created
contact. Here you can also select to keep a copy on the exchange server.

Just set up a contact with his e-mail address, then open his AD
account,
click on Exchange General, then Delivery Options, then click forward
to
and
select the contact you just set up. If you check the box "Delvier
Mail..."
you will have the e-mail on your exchange server and in you bosses
personal
mailbox as well.
